Fromage of the Day, 07.25.10: Calcagno. Floral, tangy and sweet, this Sardinian sheep’s milk cheese is as reminiscent of a true aged Provalone as it is a Pecorino. It pairs well with drier wines of both colors, and crisp beers and ciders. If it was a group, it’s Henry Threadgill’s Situation Society Dance Band, it grooves rambunctiously.
