Fromage of the Day, 08.25.10: Batenkill Brebis. Nuanced, sweet, and herbaceous, this firm sheep’s milk cheese is made at 3 Corner Farms in New York. It pairs well with many red wines, drier whites, IPAs (even super hoppy west coast ones) and a good saison. If it was an actress, it’s Toni Collette, versatile but distinctive.
