Fromage of the day, 12.23.10: Sally Jackson Goat. Tangy, lean and herbal, this fine firm-ish goat’s milk cheese from Washington state is probably no more; talk about a Grinch moment. It paired well with your favorite Vignerons, Amber Ale, or of course, a good saison. If it was a saxophonist it would be Thomas Chapin, brilliant and vastly under-appreciated.
