Fromage of the Day, 03.04.11: Pave du Nord.  Lean, colorful and easygoing, this variation of Mimolette (which is on the left in the photo) is made of cow’s milk in France.   It pairs nicely with your favorite Kolsch, a Pinot Blanc or a Finger Lakes Vignoles.  If it was a Return to Forever tune, it would be Romantic Warrior, appealing and straightforward.  The Joy of Cheese Italian March continues March 8 with a celebration of softies at Clerkenwell.  Details are here.
