Fromage of the Day, 07.28.11: Kunik. Dense, luxurious, and herbal, this bloomy rind goat’s milk cheese is made in upstate New York. It pairs well with anything sparkling. I find this cheese surprises a lot of people–maybe they forget that I’ve told them that it’s cut with cow’s cream– but they always remark at the lack of ‘goatiness’ in it’s paste and can’t believe the richness. This and the honey lavender fromage blanc are probably my favorite from Nettle Meadow.
