Fromage of the Day, 11.30.11:Twig Farm Soft Wheel.   Buttery, herbal and just a little bit funky, this Vermont cheese is made from a blend of goat and cow’s milk; it’s kind of the midway between a washed rind cow’s milk cheese like Grayson and a washed rind goat like Mont St. Francis.  It pairs well with your favorite Chenin Blanc, a Hoften Dormaal White Gold, or an Eric Bordelet Sidre.  If it was a Jason Moran recording, it would be Modernistic, smooth and spiky in all the right ways.  These are the Joy of Cheese December Events, http://wp.me/pTYGb-uK.  We also do private cheese events  as well; they involve 8-10 cheeses and start at $300 for a group of 12; our larger events, like corporate events for team building and like are also quite affordable.  Contact me at thejoyofcheese@gmail.com for more information.
