Fromage of the Day, 12.31.11: Cinerino. Smokey, sweet, and complex, this firm sheep’s milk cheese is from Italy. It is rubbed in ash, giving it a uniquely light smokey quality, it’s not as heavy handed as most Fiore Sardo’s I’ve tried. It pairs well with your favorite Nebbiolo, a Evil Twin Yang, or a Doc’s Pear Cider. If it was a frequent interpreter of Bach, it would be Gidon Kremer, spicy but overall smooth.
