Fromage of the Day, 02.04.12:  Twig Farm Goat Tomme.  Earthy, buttery, and herbal, this firm goat’s milk cheese is made in Vermont.  Like the Twig Farm Square Cheese, I find it to be sort of a goat’s milk equivalent to Tomme De Savoie.  It pairs well with your favorite Albarino, An Allagash White, a Red Breast, or a Scrumpy Hard Cider.  If it was a Brian Eno recording, it would be Before and After Science, subtle but distinctive.  The Joy of Cheese February Events begin on the 21st with a cheese and beer tasting at Breukelen Bier Merchants.  For more details go here, https://www.brownpapertickets.com/event/224366
