Fromage of the Day, 11.27.12: Pleasant Ridge Reserve.  Nutty, crisp, and fruity, this cow’s milk cheese is from Dodgeville Wisconsin.  I don’t think I exaggerate when I say it’s one of the new American classics.  It pairs nicely with your favorite Barolo, an Emilisse Rauchbier, a very very dry cider or a Redemption Rye.  If it was a Radiohead recording, it would be Kid A, familiar, different and fundamental to everything that came after.  The Joy of Cheese Autumn Events conclude with two 92nd St. Y classes: Sparkling Wines and Cheese (November 29) and Cheese and Whiskey (December 6).  For more information, visit http://www.92y.org.
