Fromage of the Day, 07.04.10: Pleasant Ridge Reserve. Nutty, smooth and delicately balanced, this is arguably the finest cheese made in America. It pairs so well with so many red wines and should be fed to every wine geek who thinks that it’s futile to try and pair red wine with cheese. It also pairs well with minerally white wines, dark lagers and ales, and saisons. If it was a Sonny Rollins record, it would be Road Shows. vol. 1, new and classic.
Just fyi: my shortlist for best American cheese also includes Cabot Clothbound Cheddar (it’s made by Jasper Hill Farms, forget your previous notions of what Cabot is about), Rogue River Blue, Vermont Shepherd, Cowgirl Creamery Red Hawk, and Green Hill.
