Fromage of the day, 07.10.10: Bra Duro. Earthy, direct, and just a tad fruity, this firm Italian cheese is from the Piedmont. It pairs well with many northern Italian reds,farmhouse ciders, Red ales, and a good dunkelweiss. If it was a Four Tet disc, it would be the new one, playful and dense.
