Fromage of the Day, 07.23.10: Tomme D’Abandonce. Nuanced, earthy and nutty, this French alpine cheese is somwhat like Comte. It pairs with lighter, fruitier red wines, balanced white wines, darkerales and maltier lagers and perhaps a saison. If it was a Steely Dan song, it’s Rikki Don’t Lose That Number, a lot of obvious upfront pleasure but a lot of subtlety too.
