Fromage of the Day, 08.05.10: Gabietou. Gamey, smooth, and direct, this French cheese is made from a blend of cow and sheep’s milk. It pairs well with the usual suspects (sweeter white wines, fruitier reds, darker beers and most ciders). If it was a trip-hop classic, it would be Portishead’s Dummy, tangy and reserved.
