Fromage of the Day, 10.24.10: Ossau Iraty Andante.  Dense, salty and sweet, this rendition of the Pyrenees sheep’s milk classic is aged by Soyoung Scanlan at her dairy in Petaluma California.  Yes, you read that right, a classic French cheese is being aged by a leading American cheesemaker.  It pairs well with Cotes du Rhone, an acidic white wine, and any IPA that wants to step up.  If it was a Erykah Badu recording, it would be Amerykah 1, sprawling and urgent.  Nutty: The Joy of Cheese November Events begin Tuesday the 9th at Clerkenwell.  For details on the entire series, visit http://wp.me/pTYGb-8h
