Fromage of the Day, 01.17.11: Vacherin Fribourgeois.  Dense, nutty and aromatic, this amazing alpine cheese makes a great fondue for aficionados; one of the best one is aged in Switzerland by Rolf Beeler.  It pairs well with big, fruit forward northern Italian reds, it can stand up to most California Zins, it might be the alpine for Rieslings across the board, and it does very well with darker ales and lagers.  If it was a Neil Young song, it would be “My My, Hey Hey (Into the Black).” The Joy of Cheese annual celebration of the blues continues with events at The Clerkenwell on the 18th and at Culturefix on the 20th.  For more information visit here.
