Fromage of the Day, 02.25.11: Rolf Beeler Gruyere. Dense, nutty, grassy, and overpowering in a very good way, this cow’s milk cheese from Switzerland is what brings a lot of people into the hand crafted cheese fold.  It pairs well with your favorite porter or stout, a Nebbiolo or a somewhat acidic white wine.  And yes, as Peter Jamros amply proved, it really does pair well with a Basque farmhouse cider.  If it a Led Zeppelin performance it would be this live rendition of Dazed and Confused (with a tremendous Page solo), canonical, deep and appealing.  The Joy of Cheese March Events start on March 1 with a pairing of hard Italian cheeses and great beers at d.b.a Brooklyn.  Details are here
