Fromage of the Day, 04.08.11: Crater Lake Blue.  Tangy, earthy, and peppery, this cow’s milk blue is made at the Rogue Creamery in Central Point, Oregon.  It pairs well with your favorite sweet white wine, the cask version of Stoudt’s American Pale Ale, or most ciders. If it was performance by John Zorn’s Bar Kokhba, it would be this rendition of “Khebar” (not sure of the vintage), complex and appealing.  Got Your Goat!
