Fromage of the Day, 05.04.11: Bethmale. Buttery, semi-soft and very very grassy, this cow’s milk cheese is made in the French Pyrenees. It pairs well with your favorite Chenin Blanc, a Hof ten Dormaal, or the cider of your choosing. If it was a Laura Nyro tune, it would “Stone Soul Picnic,” soulful and spicy. Funkee!!
