Fromage of the Day, 05.15.11: Ardi Gasna.  Dense, sweet, and just a little smoky, the Ardi Gasna I have in mind is made of sheep’s milk in the Basque regions and aged at Andante Dairy in Petaluma California.  It pairs nicely with your favorite IPA, a dry Riesling, or a Pinot Noir.  If it was a Brad Mehldau cover of a pop tune, it would be his take on Soundgarden’s “Black Hole Sun,” accessible but with surprising heft.    The Joy of Cheese celebration of washed rind cheeses continues May 17 at Clerkenwell and May 18 at Culturefix.  For details click the links.
