Fromage of the Day, 08.21.11: Tomme De La Chataigneraie.   Smooth, nutty, and herbal, this goat’s milk cheese is from France.  It pairs well with your favorite dry-ish Rose, a Hopfenstark Saison, or a Doc’s Granny Smith cider.   If it was a Wayne Shorter composition, it would be Lester Left Town, direct and elegant.  The Joy of Cheese September Events begin September 20 at a new location, Premier Cru on the Upper East Side.  More Details are forthcoming.
