Fromage of the Day, 09.20.11: L’Amuse Goat Gouda.  Smooth, sweet and highlighted by a hint of anise at the finish, this Dutch goat’s milk aged gouda is what comes after Arina and Midnight Moon and before more complex firm goat’s milk cheeses like Persille des Tignes or Bethmale Chevre.  It pairs nicely with your favorite Trocken Riesling, a Dogfish Head 120 Minute IPA, or the driest cider you know.  If it was a Four Tet track, it would “Angel Echoes,” big and affable.  The Joy of Cheese Autumn Events begin this week tonight!
