Fromage of the Day 09.22.11: Colston Bassett Stilton.  Earthy, peppery and buttery, this classic English blue is made from cow’s milk; it comes in sequence after Danish Blue and Bleu D’Auvergne and before Rogue River Blue and other blues with even more complexity to their flavor.  It pairs nicely with well, your favorite port, a Stone Smoked Porter, or a cider that leans heavily on the sweet side.  If it was a bluesman it would be Albert King, gruff and biting in the very best way possible.  The Joy of Cheese Autumn Events continue tonight!
