Fromage of the Day, 10.17.11: Goat Raclette.  Lean, herbal, and nutty, this goat’s milk interpretation of the classic cow’s milk cheese is made in France. It belongs to a class of firm-ish non gouda goat’s milk cheeses like Tomme D’Acquitaine, Bethmale Chevre, and Tomme De La Chataigneraie, distinctive but not overpowering.   It pairs nicely with your favorite Macabeau, a Kelso Flemish Red, or a cider on the sweet side.  If it was a Vijay Iyer recording, it would be “Tirtha,” nuanced and rewarding.  These are The Joy of Cheese October Events; a featured event is a cheese and wine pairing session at Premier Cru, October 19.  We also do private cheese events as well.  Contact me at for more information.
