Fromage of the Day, 10.28.11: Metronome.  Velvety, dense and vegetal, this dapper pyramid is made from a blend of goat and cow’s milk at Andante Dairy in Petaluma California.  It’s silken density is comparable only to other mixed milk cheeses from Andante.  It pairs nicely with your favorite Chablis, a Gaffel Kolsch, or a sweet cider.  If it was a Sade song, it would be “Turn My Back on You,” smooth and spiky.  The Joy of Cheese November events will be announced soon.  We also do private cheese events as well; they involve 8-10 cheeses and start at $300 for a group of 12.  Contact me at thejoyofcheese@gmail.com for more information.
