Fromage of the Day, 10.29.11: Stichelton.  Dense, peppery and very earthy, this is Stilton, the classic English blue, made by its original recipe with raw milk, traditional rennet, and aging specs.  It typically has a broader flavor than Stilton and it’s only obvious counterparts are cheeses like the Bayley Hazen Blue which is a tad more buttery.  It pairs nicely with your favorite cask drawn Porter, the most fruit forward Northern Italian red you know, or an Eden Ice Cider.  If it was a Tricky collaboration, it would be his work with Muggs, edgy and grungey.   These are The Joy of Cheese November Events; a featured event is a cheese and wine pairing focused on great cheeses for holiday entertaining at Premier Cru on Novermber 9.  We also do private cheese  as well; they involve 8-10 cheeses and start at $300 for a group of 12; our larger events, corporate events for team building and like are also quite affordable.  Contact me at for more information.
