Fromage of the Day, 12.21.11: Cornish Yarg.  Herbal, complex, and crumbly, this English cow’s milk cheese is made in Cornwall.  It’s a denser companion to the cheddar like cheeses also made in the U.K.  It pairs well with your favorite Bourgogne, a Hoften Dormaal Blonde, or almost any cider.  If it was a vocalist, it would be Patricia Barber, it draws you in.  The Joy of Cheese January Events will be announced on Friday.
