Fromage of the Day, 12.25.11: Hoja Santa.  Minty, creamy, and distinctive, this leaf wrapped goat’s milk cheese is made in Dallas, Texas.  Among the burgeoning number of leaf wrapped cheeses in America, this one is pretty unique; I know of no other cheese that imparts an overtone of sassafras.  It pairs well with your favorite Halb Trocken Riesling, an Anchor Steam Christmas Ale, or a Doc’s Pear Cider.  If it was a Keith Jarrett record, it would be The Koln Concert, spiky then elegant.  The Joy of Cheese January Events include a survey of Blue Cheeses at Kupersmith January 17.  Details soon.

    haha… i’ve never heard THe Koln Concert compared to a cheese before – let alone such an abstract type of cheese. let me guess, if it was an NBA player it would be chris Paul, nimble and yet deeply multi-faceted?!
