Fromage of the Day, 01.08.12: Gorwydd Caerphilly.  Briney, crumbly, and floral, this cow’s milk cheese is from Wales.  Although larger productions make this into just another failed English cheddar, the Gorwydd is a unique cheese brimming with its own cantankerous flavors.  It pairs with your favorite hand-drawn, cask-aged Porter, a Langhe Nebbiolo, or a Woodpecker Cider.  If it was a Charles Mingus tune, it would be “Moanin,” fierce.  These are The Joy of Cheese January Events,, a major highlight is the Kind of Blue event at Kupersmith on January 17.

    One of the few I’ve actually tasted on your list so far. I knew that there is a lot of cheese out there, but enough for every day of the year….so exciting!
