Fromage of the Day, 01.21.12: St. Agur.  Buttery, peppery, and sweet, this cow’s milk blue is from France.  It is overshadowed by other French blues, but excellent in its own right.  It pairs nicely with your favorite Auslese Riesling, a Brooklyn Monster, an Elmer T. Lee bourbon or a Doc’s Granny Smith Cider.  If it was a hard bop saxophonist, it would be Hank Mobley, great but often lost in the shuffle.  The Joy of Cheese February Events include events at Kupersmith and Bruekelen Bier Merchants.  Details soon

    That’s also one of the easiest cheese to help you do a great blue cheese sauce as it just melts in the pan, and keeps a great flavour.
