:  A firm, floral pecorino from Sardinia..

Beer:  Evil Twin Mad Dog Pale Ale (American Pale Ale, Denmark/Brookly) 4.75% ABV

 

Round 2
L’Amuse:  A superb Aged Gouda from Holland.

Beer: Omnipollo Leon (Belgian Pale Ale, Sweeden) 6.5% ABV

 

Round 3
Monte Enebro:  A blue rinded, soft goat’s milk cheese from Spain.

Beer: Hopefenstark Olstalgia Blond (CA) 5% ABV

 
Round 4
St. Pat:  A rich creamy  cow’s milk cheese from Northern California.

Beer Stillwater Cellar Door/Debutante (U.S) 6.6% ABV/6.4 ABV

 

Round 5
Caprotto:  A firm goat’s milk cheese from Castelcivita.

Beer: Cazeau Tournay Tripel

 

Round 6

Camembert Tremblaye: As close to the real thing as you can get here.

Beer: Hof Ten Dormaal Blond (Belgium) 8% ABV

 

Round 7
Isle of Mull Cheddar:  Fruity and rich at the start then rugged, smokey and sharp at the finish, this cloth bound cheddar is from Scotland.

Beer: Evil Twin Before and After Xmas (Denmark)  8% ABV

 

Round 8
Point Reyes Blue:  A sweet cow’s milk blue from California.  .

Beer:  Keegan’s Mother’s Milk Stout.

These cheeses are available for retail sale at Gastrnomie 491, 491 Columbus Avenue (83rd-84th).  Other great places to shop include The Bedford Cheese Shop,  Murray’s on Bleecker St., Whole Foods Bowery, Dean and DeLuca in Soho, Whole Foods Tribeca,  Eataly, Saxelby Cheesemongers and Formaggio Essex, Stinky Bklyn, and Artisanal.
