Fromage of the Day, 08.05.12: Brie Jouvence Fermier.  Dense, mushroom-ey and complex, this edition of the French cow’s milk classic comes from a dairy that often works with themalized milk for their cheese.  It pairs well with your favorite Chablis (naturally), a Stillwater Cellar Door, a Farnum Hill Dry, or well I’m not sure what whiskey (mebbe Lagavulin’s gentle smoke would pair with the root veggies of the cheese, but I’m not sure).  If it was a Mombojo tune, it would be Cabdela, seductive.  There will be a Joy of Cheese August event and it will be August 27th on the Upper West Side!!!!!  Details soon.
