Fromage of the Day, 08.26.12:  Fourme Aux Molleux.  Sweet, peppery and creamy, this blue cheese is Fourme D’Ambert rinsed rather liberally in Vouvray.  It pairs well with your favorite Vouvray (imagine that), an Allagash White, a Templeton Rye, or a Farnum Hill Dry cider.  If it was a style of jazz, it would be hard bop, sweet and punchy.  The Joy of Cheese late summer events continue September 12 with a tasting of six cheeses and six Ommegang beers at Gastronomie 491.  Details are here, http://www.brownpapertickets.com/event/270600.

    Where can I find this cheese? I used to be able to get it at Wegmans in Hunt Valley MD. They are no longer carrying it. If you know of any place that still sells it please let me know. Years ago, Wegmans used to sell a fourme au sauterne which was also terrific that was from Belgium. You can’t get that one again either.

      I asked the distributor and she gave me the following outlets. You can find Fourme au Moelleux at Dean&Deluca Soho, Lucy’s Whey Carnegie Hill, Westside Market Chelsea and Astoria Bier&Cheese in Astoria (Broadway). And sometimes at Campbell Cheese in Brooklyn.
      I suspect that Campbell and Lucy’s Whey would be especially amenable to shipping you some.
