Fromage of the Day, 09.17.12: Meredith Dairy Marinated Cheese (I think that’s the official name for it; at Gastronomie 491 we call it Aussie Magic).  Tangy, sweet and herbal, this marinated feta style cheese is made not far from Melbourne Australia.  It pairs well with a big crusty piece o’ bread and perhaps the following beverages, a Brooklyn Local 1, a Mosel Riesling, a Farnum Hill Dry Cider or a Michter’s Rye.  If it was a Wayne Shorter tune during his time with Blakey, it would be “The Chess Players,”  tangy and sweet, no?  The Joy of Cheese Autumn Events begin October 2nd at Gastronomie 491 with the Face Offs.  Details soon.
