Fromage of the Day, 10.18.12: Tome D’Aquitaine.  Smooth, slightly sweet, and concise, this firm goat’s milk cheese from Graves is rinsed in Sauternes as it ripens.  It pairs nicely with your favorite Sancerre, a Schneider Brooklyner Hopfenweiss, or an Isastegi Cider.  If it was a Roswell Rudd disc, it would be MaliCool, appealing and straightforward.  The Joy of Cheese is laying low but will return with three 92Y events later this season.  Details soon.
