Grayson cheeseFromage of the Day, 03.19.13: Grayson.  Aromatic, sticky and sweet, this washed rind cow’s milk cheese is from Virginia.  It pairs nicely with your favorite Muscadet, an Ommegang Abbey Ale, a Four Roses Small Batch, or a Crispin Brut Cider.  If it was a Sonny Rollins recording, it would be Rollins with the Big Brass Trio and Quintet, savory and dense.   The next cheese event is at 92nd St. Y on Thursday the 21st.  It’s called Better Red Than Dead, 8 red wines and cheeses to match.   Details are here, http://www.92y.org/tickets/production.aspx?pid=88755
