Hoch YbrigFromage of the Day, 09.09.13: Hoch Ybrig.  Nutty, grassy and malty, this new Swiss classic is made of cow’s milk.  It pairs wonderfully with your favorite Nebbiolo (I was thinking about Nebbiolo earlier today, which is the genesis of this post), a Brooklyn Brewery Oktoberfest, a Templeton Rye, or  a Naked Flock Cider (which is cheating most cheese pairs well with Naked Flock Original).  If it was a Kruder and Dorfmeister recording, it would be Conversions, soulful.  The Joy of Cheese October is taking shape.  Details soon.

  1. Hmm…I had a Templeton Rye before dinner, a Nebbiolo during dinner but somehow I missed this cheese. Looks very nice and would have gone perfectly with dinner.
