As you may know, I have a demanding nine to five as Cheese, Charcuterie and Beer Manager for an upscale retail market and cafe on the Upper West Side called Gastronomie 491. I won’t be spending much time here in the next few weeks because I’ll be there all the time. However, some of what I do there may be of interest here. These are our Cheese and Charcuterie Baskets; they consist mostly of locally produced, artisan made goodies.
